Our beef is a particular source of pride, supplied by Mark Williams of Summerhill Farm in Waterford, a sixth-generation beef farmer who has been supplying top restaurants across Ireland since the 1990s. His exceptional beef is enjoyed by our local community and guests alike, from our Carvery and Bistro to weddings and special celebrations.

We’re also proud to work with a wonderful selection of local producers, including Goatsbridge Trout Farm and a number of Kilkenny’s excellent cheesemakers, bakeries, fruit and vegetable growers, alongside suppliers from across the surrounding counties. By choosing local wherever possible, we’re delighted to support Irish producers while bringing the very best of the region to your plate.
