Gulliver’s Restaurant is the largest of our private dining spaces within the original 19th-century Newpark House, accommodating 75 to 80 guests in an elegant and atmospheric setting. Styled with warm cream panelling, deep purple tones, rich textures and striking modern artwork, it seamlessly blends historic character with contemporary sophistication. The Park Room

The Park Room at Newpark Hotel is an more intimate private dining space also located within the original 19th-century Newpark House. Accommodating up to 40 guests, it is ideally suited to family celebrations, small wedding receptions and private corporate dinners where exclusivity and atmosphere are key. Blending more traditional charm with the hotel’s renowned four-star hospitality, the Park Room provides a refined yet welcoming environment, complemented by carefully curated dining options tailored to each occasion.

The Hillcrest Room

The Hillcrest is the most intimate of our private dining spaces within the original 19th-century Newpark House, offering a charming and character-filled setting for smaller gatherings. Similar in style to the Park Room but more compact, it is ideal for hosting close-knit family celebrations, small wedding gatherings, private corporate dinners or special milestone occasions where privacy and atmosphere are paramount. The Hillcrest Room allows up to 20 guests to enjoy tailored dining options in an exclusive, elegant environment.

We proudly support local and regional producers, sourcing beef from trusted farms in Thomastown and Waterford, trout from Goatsbridge Trout Farm in Kilkenny and cheeses from renowned local creameries. Our spirits are supplied by nearby Ballykeefe Distillery, Kytelers Inn, while draft beers from Sullivan’s and O’Hara’s showcase the best of Kilkenny brewing.

As proud members of Good Food Ireland, we are independently inspected to ensure we champion premium Irish ingredients and sustainable practices across all our dining outlets. From starters such as Hereford beef croquettes or Dublin Bay prawn cocktail bruschetta, to mains including herb-infused roast striploin of beef, Wild Atlantic salmon or seasonal vegetarian dishes, and classic desserts like apple crumble or strawberry meringue roulade, every dish tells a story of provenance, flavour and community, delivering an authentic taste of Ireland and local at every event.
