We believe that sustainability extends beyond the environment to the people who make our products. We are committed to ethical sourcing practices, and support local suppliers when and where we can:

A policy of supporting local is active in the hotel.

o   “We look for the product in Kilkenny, if we can’t get it there, we look in Ireland, if we can get it there we look in Europe, if we can’t get it there… can we do without it?”

o   All wines on our menus are from no further than Europe to minimise the carbon footprint.

o   Ballykeefe distillery (14km away) used as the main supplier for Vodka, Gin & Whiskey, An award winning Zero waste farm.

o   Beef supplied by a local farmer Mark Williams, Thomastown Kilkenny, and also from Ballykeefe farm.

o   Local breweries Sullivans and O’Haras beers on draft in our main bar
