At Newpark Hotel, sustainability encompasses not only environmental responsibility but also supporting the people and communities behind the products we use. Our commitment to ethical sourcing prioritizes local suppliers to bring you the freshest, highest-quality ingredients while minimizing our carbon footprint.

Our ‘Support Local’ Sourcing Policy:

We seek to source products within Kilkenny first, expanding our search to Ireland, Europe, and only beyond if necessary – ensuring a minimal environmental impact.

Proudly Supporting Local and Regional Producers:

  • Beverages: We source our main spirits – vodka, gin, and whiskey – from Ballykeefe Distillery, just 14km away, an award-winning zero-waste farm. Our wine selection is sourced exclusively from within Europe to further reduce our carbon footprint, and we proudly feature draft beers from Sullivan’s and O’Hara’s breweries in Kilkenny.
  • Local Farms and Fisheries: We support local farmers and fisheries, sourcing beef from Mark Williams of Thomastown, Ballykeefe Farm and Summerhill Farm in Waterford, as well as trout from Goatsbridge Trout Farm in Kilkenny.
  • Artisan Bakers: Enjoy freshly baked goods from Kilkenny-based Aron Artisan Bakers and Mis en Place.
  • Cheese Selection: Featuring the finest cheeses from Dizzy Goats Farm and Knockdrinna in Kilkenny, alongside Cashel Farmhouse from Tipperary.
  • Confectionery: Satisfy your sweet tooth with chocolates from Sweet Living Chocolates in Kilkenny.
  • Farm-Fresh Produce: We serve produce from local growers, including Deegan’s Produce, Riversfield Farm, and Rodgerstown Farm in Kilkenny, along with seasonal fruits from Greenhill Fruit Farm (Wexford) and Codd Mushrooms (Carlow).
  • Breakfast and Tableware: Local produce shines on our breakfast menu, and we serve on pottery from the renowned Nichollas Mosse in Kilkenny.
